Rush Springs, Oklahoma, is renowned for its juicy watermelons, which are harvested in the fertile soil surrounding its springs. The small town has held an annual “Citrullus lanatus” festival (watermelon’s scientific name) each summer since 1948. They aren’t the only ones — watermelon festivals are a staple of communities throughout Oklahoma to the point that the state decided to officially recognize the watermelon in 2007. As Oklahoma’s state fruit was already a strawberry, the legislature decided that since watermelon comes from the cucumber and gourd families, it could also be classified as a vegetable. (For the record, most botanists argue otherwise.)
